Why should I take part?
You will spend time with like minded colleagues from the industry, using authentic recipes under the guidance of chefs who have authentic knowledge of the ingredients and menu items. After cooking your menu, you will consume the food you have created and take away the recipes from the day to take back to your institution.
There is a mini tour of Indian food that takes place the day before - this gives additional value for people travelling from greater distances as accommodation is included and allows participants to immerse themselves in this well loved global food trend.

Experience the rich diversity of Indian cuisine in this hands-on cooking class, where you'll explore the authentic flavours, regional traditions and cooking techniques that have made Indian food one of the world's most popular cuisines. Under the guidance of an experienced chef, you'll prepare a selection of traditional dishes while learning how to balance spices, layer flavours and create recipes that can be successfully adapted for university and large-scale catering. Indian cuisine offers a wealth of naturally plant-based dishes, making it an excellent source of inspiration for modern, inclusive menus.
Throughout the day you'll gain practical experience using essential ingredients and spice blends, discover the principles behind regional cooking styles, and develop the confidence to recreate authentic dishes in your own kitchen. As well as enjoying the food you've prepared, you'll leave with scalable recipes and techniques that can be incorporated into contemporary campus dining and hospitality operations.
Ideal for chefs, menu developers and catering professionals, this development day provides fresh inspiration for creating bold, flavour-led menus that reflect growing demand for authentic global cuisine. Additional classes will be available for more global food trends over the 26/27 Academic year. Full members can select the option of £149 and this will give access to 3 classes from the series or 5 classes for £249 and £299 for 7 over the year.
